I think the key to following a low carb WOE is to diversify. And to do so effectively, you need a few staples. For me. It’s always been ways to replace carbs with something as good or better. And while doing a search online for different types of breads. I started thinking about foods you can “wrap” around your protein. Which leads me to this great recipe that I found on IBreathImHungry.com. Her recipe is for Snickerdoodle crepes.
Why Egg Fast Friendly Crepes?
What appealed to me about this recipe is that it didn’t use any flour. Lately, even Almond flour has left me feeling a little bloated and I wanted to start counting TRUE carbs and not net carbs.
So crepes made out of cream cheese and eggs really got me excited! This recipe was so simple that it didn’t require much editing on my part. I made the crepe but not the butter that she has the recipe for on her site. I don’t really like snickerdoodle cookies. So I knew I would be wasting the ingredients if I made the filling.
Crepes are WONDERFUL. You can have regular crepes (breakfast), savory or sweet crepes. When I was visiting my friend Audrey in Los Angeles. She took me to a shop that served a HUGE variety of crepes.
So tonight I treated myself to 2 crepes. 1 I filled with mozzarella cheese and the other…peanut butter and jelly! SOOOOO YUMMY! And yet filling. I wanted a 3rd crepe just because it tasted so good LOL. But I’m really working on just eating until I’m full.
A few tips:
- When making crepes, make sure that your pan is HOT! Drop a few drops of water into the skillet before you start to make your crepes. The water should sizzle
- These tend to cook fast. So don’t walk away or you will have extra crispy crepes!
- The recipe calls for softened butter. I think it’s better to melt it a bit in the microwave. It had clumps of cream cheese in the mixture. Which is ok. But I like my batters “clump free”.
- I used my smallest frying pan to make these. The recipe said it would make 6 crepes and that’s exactly what it did!
